2. In a cast iron skillet sauté over medium heat for about 10 minutes:

CHUCKWAGON CAST IRON SKILLET CORNBREAD
1. Pre-heat oven to 375 F2. In a cast iron skillet sauté over medium heat for about 10 minutes:
- ½ cup butter
- 1 red pepper diced
- 2 green onions chopped
- 3 slices of ham chopped (optional)
- 1 or 2 jalapeno peppers finely chopped (optional, but does add a lot)
- 1 ½ cups milk
- 2 eggs
- 1 tsp salt
- 1 tbsp vinegar
- 1 cup flour
- I cup cornmeal
- 2 tbsp baking powder
- ½ cup frozen corn
- 1 cup grated cheddar cheese
