Lemon Poppy Seed Cake Cast Iron Bundt Cake Recipe

Ingredients:

1 Lemon Cake Mix
4 eggs
1/2 cup vegetable oil
1 (3 ounce) package Instant Lemon Pudding Mix
1 cup lemon juice
1/4 cup poppy seeds
1 container of lemon frosting

Directions:

1. Preheat oven to 350 degrees. Spray your Bundt pan with Baking Spray (Flour Spray). Over spray it. Do not preheat the pan.

2. In a large bowl, mix together the cake mix, eggs, oil, pudding mix, and poppy seeds. I eye ball the poppy seeds, I probably don't use 1/4 cup. Once mixed, place in pan.

3. Bake at 350 degrees for approximately 50 minutes or until a toothpick inserted into it comes out clean. Once done, leave cake in bundt pan for at least 10 minutes. This allows the cake to cool down a little and separate from the pan. After 10 minutes place on a baking rack or place to fully cool.

4. Once the cake has fully cooled, place the container of lemon frosting into the microwave for 15 seconds. Stir and place in the microwave for another 10 secs. If the frosting isn't a softened form, put in the microwave for a couple more seconds. Drizzle frosting over the cake. You probably will not use the entire container. I use about half and save the rest in the fridge for the next cake (keeps about 1 month).
