Could anybody tell me why some griswold 608 large label griddles have the # 8 on the top of the handle and some don't

No intentional reason. Multiple patterns for the same pieces often have variation between them, some more obvious than others. Or it could be just revised old patterns vs. newly made patterns. Or additional patterns made at a later time than the first.
