Borough Furnace

It is interesting and I'm glad someone is doing it. That said, $280 for a 9" skillet is pretty high. I believe you could buy a much cheaper Lodge and polish it in the same manner as shown in the Borough Furnace video and have a comparable pan. Or buy a really nice 100 year old Griswold or Wagner and keep the change.
 
Yes, pricey. That's the primary reason the really smooth ones of good quality disappeared decades ago.

JMoss, I happen to agree with your idea. However, pay yourself a decent, living wage while doing all that grinding and polishing and you end up with a $200-$300 skillet anyway.

I'm new to CI, but the stone polishing of the old Gris seems like a real art form, and fine-tuned / developed over time. I wouldn't think it would be easy to polish one of these successfully as a DIY-er. IMHO
 
Apparently it isn't very difficult to polish a new pan. There are several youtube videos showing how its done. Appears to take about 30 minutes if you have power tools

I used an old whetstone and vegetable oil.

Over the course of about two weeks, while relaxing watching TV, I hand polished my Lodge handled griddle. Doesn't have the nice circular lines like my "ERIE", but it cooks just as well.

It's a kind of Zen-like activity that relaxes me. Just have to be careful to keep a hand towel nearby so I don't touch anything with the black iron infused oil all over my fingers.

That actually sounds really enjoyable, up until the point that my wife kills me for polishing a skillet in the living room :D
