Cleaning Question!

Apologies if this is a dumb question but I recently got two pans from a second hand store and I covered them with easy off, put them in separate plastic trash bags, and left them alone in my basement for several days. When I rinsed off the oven cleaner, there was a light coating of rust all over both pieces. Is it possible for a pan to rust during the cleaning process like that? Both pieces were very heavily covered with gunk and if it was just one pan, I would assume that it was rusted already, but because they both were like that, I'm wondering if maybe I did something wrong or maybe left them for too long? I soaked both pans in 50/50 vinegar solution and then scrubbed them and most of the rust came off. But for future reference, since I don't have a tank or lye bath, I thought I would see if I was doing something incorrectly with the oven cleaner? Thank you!
 
Sounds like just flash rust, which forms on bare iron especially if damp or humidity is high. The high pH of the sodium hydroxide (lye) in the oven cleaner spray is a rust inhibitor.
 
It sounds to me like you did things correctly. I would check them a little sooner next time to see if the cleaner has done its work. Bare iron left in a bag with moisture is always going to rust a little. It sounds like you were dealing with flash rust. Happens to most iron. Good job so far on the restore.
 
Thank you both for the replies. That makes me feel better. My basement is humid - that's for sure. I run a dehumidifier 24/7. I will not leave the next one as long.
