Do Different Pans Require Different Cooking Temperatures?

I have a number 8 Griswold big logo (no heat ring) that I use to cook eggs. It does really good with no stick at all. I cook on medium heat with a little of oil and butter. I recently cleaned up and seasoned a #7 Erie Nickel Plated with a heat ring. It has a really nice seasoning and has a super smooth cooking surface. I tried cooking eggs on medium heat using oil and butter also and my eggs stuck. Right after that I cooked some more eggs on a medium/low temperature only using oil and my eggs did not stick at all. Has anyone else noticed different cooking temperatures for different pans? Could the heat ring help hold a higher temperatures on my Erie?

Have you considered the time? You have to give the eggs time to release from the pan. When I fry eggs I give the pan enough time to heat up to my desired temp before I put the eggs in. I then give the eggs time enough to cook and release from the pan.

Yes I used the same time to let the pan preheat and the same time to let the eggs set. For some reason to me the Erie feels a little bit lighter and in just my opinion it might heat up hotter than my other pans at the same cooking temperature.
