Petite Filet Tender w/Mushrooms

I did tender tips in the cast iron (13.25" Lodge) today

Started with a little olive oil in pan on stovetop at medium high heat till smoking

Preheat oven to 425 degrees

Seared 3 steaks (petite filet tender / poor man's filet mignon) 5 min on both sides
2 1/2# total of steak

Added 1 onion & 2 boxes of whole baby Bella mushrooms cut up

Put whole CI in oven and let bake for 12 minutes

Pull steaks out and let them sit for 5 minutes on a plate before cutting

Cut steak into bite siz chunks after 5 minutes , steak will be medium rare

Take CI pan out of oven and add steak to mushrooms & onions , stir it all up
Add a pad or two of butter here & there

Set hot CI pan on table , on oven pads and cover with foil for 5 minutes ....steak will be medium well done and melt in your mouth.

Serve & Enjoy !

That dose look good,

I'm more of a just under medium rare to my liking. But that's just me, but the roommate I have now likes his so well done I could drive nails with it. I don't let him cook my chops either:)

I like steak more pink too, it is really easy to adjust that, as it is really medium rare when I cut the steak and throw it back in the CI pan with the mushrooms and onion & cover with foil . It doesn't go back to the stove at this point so...... At this stage , the foil could be skipped and you could wait a few minutes to add it all together, so the steak doesn't cook up to the (medium well) we had.

This particular cut of steak is so tender and we are lucky enough to have a butcher that always has it in the case. It is literally just as good or better than filet mignon. Even cooked up to this medium well, it was so tender that it didn't matter. It's $8/lb here.......

This pic shows the steak I use, 3 on the bottom are petite tender / poor man's filet mignon.......the two round steaks on top are chuck eye steaks. Disregard those. I use them for steak & eggs , cheap alernative cut to a ribeye.
