Was surfing the cast iron internet and tracked a recipe on the Finex Cast Iron Company's website for scratch blueberry pancakes. I thought I'd give them a try....I used old wobbly, spinner Griswag #9.
what I learned...
-I use an ice-cream scoop to measure out quantity sufficient... turns out that 3/4 of my scoop makes appropriate size...
-They may looked burnt/over-done to some (finished product doesn't match website photo-op)... but, the bride loves a bit of crunch on the outer edge of her pancakes... got to agree (it's the law).
-I am lousy at chef style "folding" in the blueberries...I lack the patience...thus, purple batter/cakes. (I'm a "dumper" not a "folder"). :chuckle
oesn't seem to effect taste.
Speaking of taste.... outstanding ! Drizzled some warmed maple syrup over the top...mercy. Reminded me of panckaes I had as a kid (60's) at a local diner called "Pappy's Pancake House" (the family go to after Mass)...I served with OJ and a little Jameson's in my coffee. Perfection.
Might want to add this recipe to your file. :glutton:
