I've been baking bread using the Lahey/no knead method (see pane rustica-Frankhauser U of Cincinatti) for a number of years. When pressed for time or just plain lazy I use the dough setting on my bread machine to do the heavy lifting then bake in my dutch oven.

I find it hard to predict when I need a fresh loaf of bread, and find the no-knead, refrigerate method better. I actually use a recipe from a cookbook, but this one is pretty much the same: http://www.kingarthurflour.com/recipes/no-knead-crusty-white-bread-recipe
Plus, I'm not a good baker, and it is nice to have a recipe that is more forgiving to my "throw it together" personality.
